how to make oysters with green scallion mignonette

ingredients:

  • ½ dozen - 1 dozen fresh oysters
  • 1 lemon, cut into wedges 
  • ¾ cup red wine vinegar
  • 2-3 stalks of scallion
  • ½ fresh jalapeno pepper
  • 1 tsp sugar
  • Crushed ice
    Optional: hot sauce




instructions:

  1. Make the mignonette by very finely chopping 2-3 stalks of scallion and half a jalapeno. Add into a mason jar.

  2. Add ¾ cup red wine vinegar, sugar, and salt and pepper to taste. Let sit for at least 15 minutes to develop flavour.

  3. Carefully shuck the oysters, leaving them on the half shell.

  4. Serve with a side of mignonette and lemon wedges. Optional - add a dash of hot sauce
