The best time to plant potatoes is in early spring. Planting potatoes two to three weeks before your last frost date will produce the best results. If you have a late spring, you can plant later, through April (depending on the location) or even June, especially in containers.


•  1c extra virgin olive oil

•  3-4 yukon gold potatoes, peeled, quartered, cut in 1/4 inch slices

•  1 Spanish onion, quartered, thinly sliced

•  6-8 eggs, beaten

•  salt & pepper to taste

•  1/4 c chives

•  250 ml sour cream

Potatoes can grow outdoors in the winter in warmer southern climates. In colder climates, potatoes can grow in the winter if planted in containers indoors or in a heated greenhouse.

 Veradek Spanish Onion and Potato Tortilla


  1. Heat oil in a 10-12 inch nonstick pan over medium heat. Cook the onions first until slightly caramelized, then add potatoes and salt and pepper. Cook for approx. 15-20 mins or until potatoes are tender.

  2. In a large mixing bowl, make the tortilla mixture. First, beat the eggs and season with salt and pepper. Then using a slotted spoon, carefully add the cooked onions and potatoes to the eggs and combine. Cover the mixture with plastic wrap or a towel and let it sit at room temperature for 10 minutes. The mixture will thicken slightly. Pour the remaining oil in a container and reserve for later.

  3. In the same pan, heat 3 tbsp of the reserved oil on medium heat. Add the mixture and spread it evenly around the pan using a spatula. Cook for approx. 8 mins or until the bottom is golden brown. 

  4. Place a large plate (larger than the pan) over the skillet and carefully flip the pan over and onto the plate. Then slide the tortilla back into the pan to cook the other side.

  5. In the meantime, make the crema by combining chives and sour cream. 

  6. Finally, check if the tortilla is fully cooked by gently pressing down on it. It should be firm. Once fully cooked, slide it onto a plate, slice and serve with chive crema. Enjoy!

Potatoes can remain fresh for 3 to 6 months or longer. Under ideal storage conditions, potatoes often last until Spring before they begin sprouting. Sprouted potatoes can be planted in the Spring, as long as they look healthy and the previous season was disease free.
